  • 3 tablespoons butter, unsalted, at room temperature For a controlled salty-sweet balance.
  • 1 package (10 oz) mini marshmallows Jet-Puffed brand recommended for best melting.
  • 6 cups Rice Krispies cereal Use the traditional brand.
  • 1 teaspoon vanilla extract Use pure for the best flavor.
  • Sprinkles for decoration Use festive colors for a joyful presentation.

Preparation
  1. In a large pot, melt the butter over low heat. Stir occasionally to avoid scorching. This should take about 2-3 minutes.
  2. Once the butter is melted, add the entire package of mini marshmallows and stir continuously until melted and smooth, about 5 minutes. Remove from heat and stir in vanilla extract.
  3. Quickly add in the Rice Krispies cereal and stir gently until well-coated with the marshmallow mixture.
  4. Allow the mixture to cool for about 5 minutes. Once cool enough to handle, use buttered hands to roll the mixture into small balls and place on a baking sheet lined with parchment paper.
  5. While treats are still warm, sprinkle them generously with colorful sprinkles for decoration. Allow to cool completely before serving.

Notes

Store leftovers in an airtight container at room temperature for up to a week. Can be made in advance and frozen for up to three months. If too sticky, add more cereal; if too hard, they may have been overcooked.
