Preparation
  1. Preheat your oven to 375°F (190°C). It’s essential to start with a hot oven to ensure even baking.
  2. In a bowl, mix together flour, baking soda, and baking powder. This will be your dry mixture.
  3. In another bowl, cream together the softened butter and sugar until smooth, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and almond extract.
  5. Gradually blend the dry ingredients into the creamed mixture until just combined.
  6. Roll the dough into 1-inch balls and then roll each ball in sanding sugar.
  7. Place the cookies on ungreased baking sheets and flatten slightly. Leave about 2 inches between each cookie.
Baking
  1. Bake for 8 to 10 minutes or until golden around the edges.
  2. Let cool on wire racks to set properly.

Notes

Avoid overbaking; the cookies will continue to cook slightly once removed from the oven. These cookies can stay fresh for up to a week in an airtight container at room temperature.
