Preparation
  1. Peel and slice about 4-6 firm tart apples (about 5 cups). Toss them gently with 1 cup of brown sugar and 2 teaspoons of cinnamon. Let this sit while you prepare the rest.
  2. Preheat your oven to 350°F (180°C). Place ½ cup of unsalted butter in a 9x13 inch baking dish and set it in the oven to melt.
  3. In a mixing bowl, whisk together 1 cup of flour, 1 cup of white sugar, 1 tablespoon of baking powder, ½ cup of milk, and 1 teaspoon of vanilla extract until you achieve a smooth batter.
  4. Once the butter has melted, carefully remove the baking dish from the oven and pour the batter over the melted butter without stirring.
  5. Evenly distribute the apple mixture on top of the batter. It doesn't need to look neat.
Baking
  1. Bake in your preheated oven for 35-40 minutes, or until the top is golden brown and bubbly. A toothpick inserted in the batter should come out clean.
  2. Allow the cobbler to cool slightly before serving warm. Top with vanilla ice cream or whipped cream for an extra special touch.

Notes

For the best results, ensure your butter and milk are at room temperature. Store leftovers at room temperature for up to 2 days or in the refrigerator for up to a week. Freezing portions for longer storage (up to 3 months) is also recommended.
