Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until fully combined.
- Pour in the melted butter, eggs, and vanilla extract. Mix gently until just combined—don’t overmix!
- In another bowl, whisk together the brown sugar and ground cinnamon until evenly distributed.
Layering
- Spread half of the batter in the prepared pan. Sprinkle half of the cinnamon mixture on top.
- Using a spoon, dollop the remaining batter over the cinnamon layer, followed by the rest of the cinnamon mixture.
- Use a knife to gently swirl the two layers together for that beautiful marbled effect.
Baking
- Place in the preheated oven and bake for 25-30 minutes, or until golden brown and set in the middle. It should spring back when lightly pressed.
- Allow to cool in the pan for a few minutes before cutting them into bars.
Notes
For perfect texture, don't overmix the batter. Store the bars in an airtight container at room temperature for up to 4 days or in the fridge for up to a week. You can prepare the batter a day ahead and bake just before serving.
