For the Filling
  • ½ cup brown sugar, packed The sweetness source for the filling.
  • 2 tsp ground cinnamon Extra warmth and spice for the filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, salt, and cinnamon in a medium bowl.
  3. Cream the softened butter in a large mixing bowl until light and fluffy, about 2-3 minutes.
  4. Add granulated sugar and brown sugar to the creamed butter, mixing until well combined and fluffy.
  5. Beat in the egg and vanilla extract until fully incorporated.
  6. Gradually mix in the dry ingredients until just combined.
Filling & Shaping
  1. Prepare your filling by mixing the packed brown sugar and cinnamon in a small bowl.
  2. Spread half of the dough onto parchment paper to form a rectangle, about 1/4 inch thick.
  3. Sprinkle with the filling mixture and roll tightly using the parchment.
  4. Slice the log into rounds about 1/2 inch thick and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden brown.
  2. Cool on a wire rack for 5-10 minutes.

Notes

Store your cookies in an airtight container at room temperature for up to 5 days. Freeze for up to 2 months. You can prep the dough and freeze it before baking.
