Preparation
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking powder, salt, and cinnamon in a medium bowl.
- Cream the softened butter in a large mixing bowl until light and fluffy, about 2-3 minutes.
- Add granulated sugar and brown sugar to the creamed butter, mixing until well combined and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually mix in the dry ingredients until just combined.
Filling & Shaping
- Prepare your filling by mixing the packed brown sugar and cinnamon in a small bowl.
- Spread half of the dough onto parchment paper to form a rectangle, about 1/4 inch thick.
- Sprinkle with the filling mixture and roll tightly using the parchment.
- Slice the log into rounds about 1/2 inch thick and place them on a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes, or until the edges are golden brown.
- Cool on a wire rack for 5-10 minutes.
Notes
Store your cookies in an airtight container at room temperature for up to 5 days. Freeze for up to 2 months. You can prep the dough and freeze it before baking.
