Method

For Bagel Dough
  1. Prepare the Yeast: In a small bowl, combine the lukewarm water, molasses, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. Mix the Dough: In a large bowl, combine the bread flour and kosher salt. Make a well and pour in the yeast mixture. Stir until a shaggy dough forms.
  3. Knead the Dough: Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. First Rise: Place in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour or until doubled.
  5. Shaping the Bagels: Punch down and divide into 12 pieces. Roll into balls and poke a hole through the center, stretching to about 2-3 inches wide.
  6. Boil the Bagels: In a large pot, bring water to a boil with molasses. Carefully add the bagels and cook for 1-2 minutes on each side.
For Cinnamon Sugar Topping
  1. Prepare the Topping: In a small bowl, mix brown sugar, granulated sugar, and cinnamon.
  2. Egg Wash: Preheat oven to 425°F (220°C). Brush each bagel with melted butter and sprinkle with the cinnamon sugar mixture.
  3. Bake: Bake for 20-25 minutes until golden brown and hollow when tapped on the bottom.
  4. Cool and Enjoy: Allow to cool on a wire rack for a few minutes.
