Ingredients
  

For the Muffins
  • 1 loaf French bread Best if day or two old
  • 4 pieces eggs Preferably organic
  • 1 cup milk Whole milk preferred; can substitute with almond or oat milk
  • 1/2 cup sugar Granulated or brown sugar for added flavor
  • 1 tablespoon cinnamon The magic spice for flavor
  • 1 teaspoon vanilla extract Use pure for best flavor
  • 1/4 cup butter, melted Unsalted or dairy-free alternative
  • 1/2 cup powdered sugar For coating

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin well.
  2. Tear the French bread into bite-sized pieces and place them in a large bowl.
  3. In a medium bowl, whisk together the eggs, milk, sugar, cinnamon, vanilla extract, and melted butter until well combined.
  4. Pour the egg mixture over the bread pieces and gently stir until everything is well coated.
  5. Let the mixture sit for about 5-10 minutes to allow the bread to soak up the mixture.
  6. Spoon the mixture into the muffin cups, filling them about 3/4 full.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until lightly golden and a toothpick inserted comes out clean.
  2. Once slightly cooled, roll the muffins in powdered sugar for the finishing touch.

Notes

Store leftover muffins in an airtight container for up to 2 days at room temperature or refrigerate for up to 1 week. Muffins can be frozen for up to a month.
