Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin well.
- Tear the French bread into bite-sized pieces and place them in a large bowl.
- In a medium bowl, whisk together the eggs, milk, sugar, cinnamon, vanilla extract, and melted butter until well combined.
- Pour the egg mixture over the bread pieces and gently stir until everything is well coated.
- Let the mixture sit for about 5-10 minutes to allow the bread to soak up the mixture.
- Spoon the mixture into the muffin cups, filling them about 3/4 full.
Baking
- Bake in the preheated oven for 15-20 minutes or until lightly golden and a toothpick inserted comes out clean.
- Once slightly cooled, roll the muffins in powdered sugar for the finishing touch.
Notes
Store leftover muffins in an airtight container for up to 2 days at room temperature or refrigerate for up to 1 week. Muffins can be frozen for up to a month.
