Preparation
- Preheat your oven to 350°F (175°C). Line a 9x5 loaf pan with parchment paper, securing it with binder clips.
- In a large mixing bowl, combine the wet ingredients: finely shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract. Mix thoroughly until well combined.
- In a separate bowl, whisk together the dry ingredients: all-purpose flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Avoid over-mixing to prevent large air bubbles in the bread.
- In a small bowl, mix together the cinnamon and sugar for the swirl.
Baking
- Pour half of the batter into the prepared loaf pan. Evenly sprinkle half of the cinnamon sugar mixture on top.
- Then, pour the remaining batter over this layer and spread it evenly.
- Finally, top with the rest of the cinnamon sugar, creating a beautiful swirl effect by running a knife through the batter in both vertical and horizontal directions.
- Bake in the preheated oven for 60-65 minutes or until the top is golden brown and a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
- Slice and serve, storing leftovers in an airtight container at room temperature.

For optimal enjoyment, serve warm, topped with a pat of butter or cream cheese and a sprinkle of cinnamon. Store leftover bread in an airtight container. Can be frozen for up to three months.
