Ingredients
  

Granola Base
  • 1 cup coconut flakes (or 1/2 cup dried shredded coconut) Look for unsweetened flakes for a healthier option.
  • 2 Tbsp sesame seeds Toast them for better flavor.
  • 100 g palm sugar (about 1/2 cup packed) Can substitute brown sugar.
  • 1/4 cup virgin coconut oil Unrefined for more flavor.
  • 1/4 cup coconut milk Adds creaminess.
  • 1/4 teaspoon salt Enhances flavors.
  • 3 cups rolled oats Can substitute with quick oats.
  • 2 cups dried fruits, nuts, seeds of your choice Includes roasted peanuts for added crunch.

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. Line a large baking pan with parchment paper or a silicone liner.
  3. In a dry sauté pan, toast the sesame seeds over medium-high heat for about 2-3 minutes until golden brown.
  4. Add coconut to the same pan and stir for about 4-5 minutes until deep brown.
  5. In a small pot, combine palm sugar, coconut milk, coconut oil, and salt. Simmer while stirring until dissolved (approx. 5 minutes).
Baking
  1. Remove the pot from heat and stir in toasted sesame seeds and browned coconut.
  2. Drizzle the syrup over the oats and toss to coat.
  3. Spread the mixture on the prepared baking sheet and bake for 30-35 minutes, stirring halfway.
  4. Let the granola cool completely on the baking sheet.
  5. Mix in coconut flakes, dried fruits, and nuts after cooling.
  6. Store in an airtight container.

Notes

For chunkier granola, avoid stirring too much while baking. Add spices like cinnamon for flavor.
