Preparation
- Preheat your oven to 325°F (165°C).
- Line a large baking pan with parchment paper or a silicone liner.
- In a dry sauté pan, toast the sesame seeds over medium-high heat for about 2-3 minutes until golden brown.
- Add coconut to the same pan and stir for about 4-5 minutes until deep brown.
- In a small pot, combine palm sugar, coconut milk, coconut oil, and salt. Simmer while stirring until dissolved (approx. 5 minutes).
Baking
- Remove the pot from heat and stir in toasted sesame seeds and browned coconut.
- Drizzle the syrup over the oats and toss to coat.
- Spread the mixture on the prepared baking sheet and bake for 30-35 minutes, stirring halfway.
- Let the granola cool completely on the baking sheet.
- Mix in coconut flakes, dried fruits, and nuts after cooling.
- Store in an airtight container.
Notes
For chunkier granola, avoid stirring too much while baking. Add spices like cinnamon for flavor.
