  • 4 pieces cod fillets Fresh is best for flavor; I recommend using wild-caught if you can.
  • 1 clove garlic, minced For extra flavor; don’t skimp here!
  • 2 tablespoons olive oil Extra virgin for the best flavor.
  • To taste salt I usually start with a teaspoon and adjust as needed.
  • To taste black pepper Freshly cracked black pepper elevates the dish.
  • 1 tablespoon fresh parsley, chopped For garnishing, adding that lovely pop of color.
For the Sauce
  • 2 cups roasted red peppers Jarred or homemade—you can even roast your own for a fresher taste.

Preparation
  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Prep the Cod: Rinse the cod fillets under cold water and pat them dry with a paper towel.
  3. Make the Sauce: In a blender or food processor, combine the roasted red peppers and minced garlic. Blend until smooth and set aside.
  4. Chef's Tip: Always taste your sauce. Add a pinch of salt if it’s lacking that pop of flavor.
Baking
  1. Sauté the Cod: In an oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Carefully place the cod fillets in the pan. Cook for about 3-4 minutes on each side until a golden crust forms.
  2. Common Mistake to Avoid: Avoid overcrowding the pan—this will create steam instead of a nice sear.
  3. Add the Sauce: Pour the roasted red pepper sauce over the cod fillets, ensuring they’re well-coated.
  4. Bake: Transfer the skillet to the preheated oven and bake for an additional 10 minutes or until the fish flakes easily with a fork.
Serving
  1. Garnish: Remove from the oven and sprinkle with fresh parsley just before serving.
  2. Plate: Serve the cod with a generous drizzle of sauce and a side of roasted vegetables or a light salad.

Notes
