The Icing and Topping

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy—about 3-4 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. In a small bowl, mix cinnamon with a little sugar to create a topping.
  7. Scoop dollops of dough onto the prepared baking sheet and create a small indentation in the center of each.
  8. Fill each indentation with a bit of buttery streusel.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Let cool on a wire rack before icing.
  11. For icing, whisk together powdered sugar and milk until smooth, then drizzle over the cooled cookies.
