Preparation
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, combine dry ingredients: cornmeal, all-purpose flour, sugar, baking powder, and salt. Stir well.
- In another bowl, whisk together wet ingredients: milk, eggs, melted butter, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and mix until just combined.
Cooking
- Lightly grease the waffle iron and pour batter onto it (about 1/2 to 3/4 cup). Close lid and cook until golden brown and crispy, about 4-6 minutes.
- Carefully remove waffles and serve immediately with toppings of your choice.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 1 month. Reheat in a toaster or oven.
