Wet Ingredients

  • 2 large eggs Let them come to room temperature.
  • 1/4 cup melted butter Unsalted butter recommended.

Preparation
  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, combine dry ingredients: cornmeal, all-purpose flour, sugar, baking powder, and salt. Stir well.
  3. In another bowl, whisk together wet ingredients: milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
Cooking
  1. Lightly grease the waffle iron and pour batter onto it (about 1/2 to 3/4 cup). Close lid and cook until golden brown and crispy, about 4-6 minutes.
  2. Carefully remove waffles and serve immediately with toppings of your choice.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 1 month. Reheat in a toaster or oven.
