  • ½ cup fresh or frozen blueberries Mix in other berries if desired.
  • ½ lemon zest Optional for added brightness.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a small baking dish (about 6x6 inches).
  3. In a blender, combine cottage cheese, eggs, honey, vanilla, oats, baking powder, and salt. Blend until smooth and creamy.
  4. Gently fold in the blueberries (and lemon zest, if using).
  5. Pour the mixture into the prepared dish and bake for 25-30 minutes, until golden and set.
  6. Allow to rest for 5-10 minutes before slicing.
  7. Top with fresh blueberries, a drizzle of honey, or Greek yogurt.

Notes

Can store in an airtight container for 3 days in the fridge. Freezes well for up to a month.
