- Preheat your oven to 375°F (190°C).
- Lightly grease a small baking dish (about 6x6 inches).
- In a blender, combine cottage cheese, eggs, honey, vanilla, oats, baking powder, and salt. Blend until smooth and creamy.
- Gently fold in the blueberries (and lemon zest, if using).
- Pour the mixture into the prepared dish and bake for 25-30 minutes, until golden and set.
- Allow to rest for 5-10 minutes before slicing.
- Top with fresh blueberries, a drizzle of honey, or Greek yogurt.
Notes
Can store in an airtight container for 3 days in the fridge. Freezes well for up to a month.
