  • 1 cup marinara sauce Store-bought or homemade.
  • 1/2 cup chopped bell peppers Any color; red and yellow recommended for sweetness.
  • 1/2 cup sliced mushrooms Cremini recommended for deeper flavor.
  • 1/2 cup chopped spinach or kale Use fresh for best taste; frozen is a quick alternative.
  • 1/2 cup shredded mozzarella cheese Optional to mix in parmesan for extra flavor.
Seasoning and Additional Ingredients

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Chop your bell peppers, slice the mushrooms, and dice onions if using.
Assembly
  1. In a mixing bowl, scoop out your cottage cheese. Add a sprinkle of salt and pepper, stirring to combine.
  2. Pour in the marinara sauce and mix until evenly distributed.
  3. Add your chopped bell peppers, sliced mushrooms, chopped spinach or kale, diced onions, and olives. Mix well.
Cooking
  1. Transfer your mixture into a greased baking dish.
  2. Sprinkle shredded mozzarella on top.
  3. Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

Consider adding Italian herbs to your marinara for extra flavor. Store leftovers in the fridge for up to 3 days.
