- In a large pot, bring salted water to boil. Add your twisted pasta and cook according to package instructions until al dente (typically about 8-10 minutes). Drain and set aside.
- In a large skillet over medium heat, melt the room-temperature butter. Add the diced chicken and season with 1 tablespoon of Cajun seasoning. Sauté until the chicken is golden brown and cooked through—approximately 6-7 minutes.
- In the same skillet, reduce the heat to low and pour in the heavy cream. Stir in the remaining Cajun seasoning and slowly add the mozzarella cheese, whisking continuously until melted and smooth.
- Add the drained pasta to the skillet, tossing it in the creamy sauce until fully coated. Taste and adjust with salt and pepper as needed.
- Divide into bowls and garnish with extra mozzarella or fresh parsley if desired.
Notes
This dish can be stored in the refrigerator for up to 3 days in an airtight container. Reheat gently on the stove, adding a splash of milk if it seems too thick. You can swap chicken for shrimp or sausage, and also consider adding sautéed mushrooms or zucchini for a vegetarian option.
