  • 600 g wild rainbow trout fillet, cut into 1-inch chunks Any preferred fish can be used.

  • A few sprigs cilantro or green onion, chopped (optional) Optional for garnish.
For the Sauce
  • 3 Tbsp fish sauce Use a high-quality fish sauce for the best flavor.
  • 3 Tbsp lime juice Fresh-squeezed for a zesty kick.
  • 1 Tbsp sugar Balances savory and tangy elements.
  • 1/4 to 1/2 teaspoon roasted chili flakes, to taste Adjust according to spice preference.
For Frying
  • Frying oil (canola or sunflower recommended) Choose oil with a high smoke point.
  • Rice for serving Perfect for soaking up the sauces.

Method
 

Prepare the Sauce
  1. In a bowl, mix together fish sauce, lime juice, sugar, and roasted chili flakes until the sugar fully dissolves. Set aside.
Fry the Garlic
  1. Heat a wok with frying oil until it is 2 inches deep and reaches 250°F. Add thinly sliced garlic and fry until golden and fragrant, about 3-4 minutes. Remove and drain on paper towels.
Cook the Fish
  1. Increase oil temperature to 400°F. Carefully add fish chunks in batches, frying for 2-3 minutes or until golden brown. Remove and drain on paper towels.
Plating
  1. Arrange crispy fish on a serving plate, drizzle with sauce, sprinkle with fried garlic and cilantro or green onion, and serve with rice.

Notes

Make sure your oil is hot enough for a crispy exterior and avoid over-frying the garlic to prevent bitterness. For extra crunch, consider double frying the fish.
