Prepare the Sauce
- In a bowl, mix together fish sauce, lime juice, sugar, and roasted chili flakes until the sugar fully dissolves. Set aside.
Fry the Garlic
- Heat a wok with frying oil until it is 2 inches deep and reaches 250°F. Add thinly sliced garlic and fry until golden and fragrant, about 3-4 minutes. Remove and drain on paper towels.
Cook the Fish
- Increase oil temperature to 400°F. Carefully add fish chunks in batches, frying for 2-3 minutes or until golden brown. Remove and drain on paper towels.
Plating
- Arrange crispy fish on a serving plate, drizzle with sauce, sprinkle with fried garlic and cilantro or green onion, and serve with rice.
Notes
Make sure your oil is hot enough for a crispy exterior and avoid over-frying the garlic to prevent bitterness. For extra crunch, consider double frying the fish.
