Ingredients
  

Vegetables
  • 2 medium zucchini Grated and moisture squeezed out
  • 1/4 cup green onions Chopped
Dairy
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
Other
  • 1/2 cup all-purpose flour Can be substituted with almond flour for gluten-free
  • 2 large eggs Acts as a binding agent
  • salt and pepper To taste
  • oil For frying

Method
 

Preparation
  1. Grate the zucchinis and place them in a clean towel. Twist the towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the drained grated zucchini with Parmesan cheese, Mozzarella cheese, flour, eggs, green onions, and season with salt and pepper. Mix until well combined.
Cooking
  1. Heat a heavy-bottomed skillet over medium heat and add enough oil to cover the bottom.
  2. Drop spoonfuls of the mixture into the skillet and flatten them gently with the back of a spatula.
  3. Cook for 3-4 minutes on each side, or until the fritters are golden brown and crispy.
  4. Remove them from the skillet and drain on paper towels to absorb any excess oil.
Serving
  1. Serve warm as an appetizer or side dish, ideal alongside a fresh salad or grilled meats.

Notes

For firmer fritters, opt for freshly grated zucchini. Use high-quality extra virgin olive oil for frying. Consider adding chia seeds for added nutrition.
