  • 2 lbs beef stew meat Look for cuts like chuck for the best flavor.
  • 1 medium onion, diced Preferably sweet onion for a mild flavor.
  • 2 cups mushrooms, sliced Button or cremini mushrooms work beautifully.
  • 1 packet onion soup mix For that robust flavor.
  • 1 can (10.5 oz) cream of mushroom soup Recommended Campbell’s for consistency.
  • 1 cup sour cream Use full-fat for creaminess.
  • 1 cup beef broth Homemade or store-bought—check for low sodium.
  • 3 cups egg noodles, cooked Homemade or your favorite brand.

Preparation
  1. Dice the onion and slice the mushrooms. Set these aside.
Cooking
  1. In a large crockpot, add the beef stew meat, diced onion, sliced mushrooms, onion soup mix, cream of mushroom soup, and beef broth. Stir everything together to combine the ingredients evenly.
  2. Set your crockpot to low and cook for 6-8 hours.
Finishing Touches
  1. About 20 minutes before serving, stir in the sour cream and let the mixture heat through.
  2. Cook the egg noodles according to package instructions and serve the beef stroganoff over the warm noodles.
  3. If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the crockpot in the last 30 minutes of cooking.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Prepare your ingredients a day in advance for convenience.
