Preparation
  1. In a bowl, whisk together beef broth, soy sauce, minced garlic, cornstarch, grated ginger, and a pinch of pepper to prepare the sauce.
  2. In the Crockpot, combine the beef strips, sliced onion, and sliced bell peppers.
  3. Pour the prepared sauce over the beef and vegetables, ensuring everything is coated well.
Cooking
  1. Set your Crockpot on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  2. Once cooked, stir to combine and thicken the sauce, optionally letting it cook on high for an additional 30 minutes without the lid.

For richer flavor, let beef strips sit at room temperature for about 30 minutes before cooking. Avoid overcrowding the Crockpot for even cooking.
