  • 2 pounds chicken breast Opt for organic, free-range for enhanced flavor.
  • 1 can white beans, drained and rinsed (15 oz)
  • 1 can corn, drained (15 oz)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth Use low-sodium, homemade for richer flavor.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream Can substitute with light cream or half-and-half.
  • Chopped cilantro for garnish

Preparation
  1. In a crockpot, combine the chicken breast, white beans, corn, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper. Mix until well combined.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  3. Once cooked, remove the chicken, shred it, and return it to the pot. Stir gently.
  4. Stir in the heavy cream and heat through for about 10 minutes.
  5. Serve hot, garnished with chopped cilantro.
