Method
 

Preparation
  1. In a large bowl, combine the shredded green cabbage, purple cabbage, grated carrots, red bell pepper, green onions, and cilantro. Toss gently to mix.
  2. In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, minced ginger, salt, and pepper. Taste and adjust seasoning as desired.
  3. Pour the dressing over the slaw. Toss thoroughly to coat.
  4. Let your slaw sit at room temperature for at least 15 minutes to allow flavors to meld.
  5. Before serving, sprinkle toasted sesame seeds over the top.

Notes

For the freshest taste, enjoy your slaw within a few hours after assembly. If making ahead, keep it stored in the fridge without sesame seeds until serving.
