  • 400 g 400g can chickpeas Make sure to rinse and drain them well.
  • 1 Cup 1 Cup rolled oats Opt for gluten-free oats if needed.
  • 2 cloves 2 cloves garlic Freshly minced adds robust flavor.
  • 1 Tbsp 1 Tbsp lemon juice Freshly squeezed for best flavor.
  • Salt Adjust to your preference.
  • 1/4 Cup 1/4 Cup olive oil A good-quality extra virgin olive oil enhances richness.

Method
 

Preparation
  1. Start by rinsing and draining your canned chickpeas to enhance flavor and texture.
  2. Place the chickpeas into a food processor and blend until smooth.
  3. Add the rolled oats and blend again until finely chopped.
  4. Toss in the minced garlic, lemon juice, and salt, then blitz until combined.
  5. Gradually drizzle in the olive oil while blending to form a smooth dough.
  6. Line a baking tray with baking paper and flatten the dough to about 5mm thick.
  7. Score the dough into cracker shapes using a pizza roller or knife.
  8. Preheat your oven to 180°C (360°F) and bake for 40-50 minutes until golden brown.
  9. Allow to cool completely before breaking apart.

Notes

Watch the crackers closely near the end of baking to avoid burning. If they puff up, press down with a spatula to flatten them. Store in an airtight container for up to a week at room temperature.
