  • 2 cups strawberries Look for vibrant red berries without blemishes.
  • 1 tablespoon olive oil Opt for high-quality extra virgin olive oil.
  • 1 tablespoon balsamic vinegar A good quality balsamic adds a sweet tang.
  • 1 teaspoon honey Substitute with maple syrup for a vegan option.
  • 1/4 teaspoon salt Use sea salt or kosher salt.
  • 1/4 teaspoon black pepper Freshly cracked pepper elevates the flavors.
  • 2 tablespoons fresh mint Use fresh mint for the best flavor.

Method
 

Preparation
  1. Wash the cucumber thoroughly under cold running water.
  2. Slice the cucumber into thin rounds, about 1/8-inch thick.
  3. Place the sliced cucumber into a large mixing bowl.
  4. Rinse the strawberries under cold water and pat them dry.
  5. Hull the strawberries by cutting off the green tops.
  6. Slice the strawberries into thin slices, about 1/4-inch thick.
  7. Add the sliced strawberries to the bowl with the cucumber.
Dressing & Mixing
  1. In a small bowl, combine olive oil, balsamic vinegar, and honey. Whisk until honey dissolves.
  2. Sprinkle salt and black pepper into the dressing mixture and whisk again.
  3. Pour the dressing over the cucumber and strawberry slices.
  4. Gently toss to coat each slice with the dressing.
Garnishing & Serving
  1. Wash the mint leaves, pat them dry, and slice into thin ribbons.
  2. Add the freshly sliced mint to the salad.
  3. Toss everything together and taste for seasoning.
  4. Let the salad sit for 5 to 10 minutes, then serve immediately.

Notes

Adjust sweetness with additional honey if preferred. Store leftovers in an airtight container in the fridge for up to two days.
