Preparation
- Preheat your oven to 180°C (350°F).
- Prepare your baking pan: Line a square (8-inch) pan with parchment paper, leaving a bit of an overhang for easy removal.
- Melt the butter and chocolate together in a medium saucepan over low heat, stirring constantly until melted and smooth (about 3-5 minutes).
- Remove from heat and add the white and brown sugars, mixing until fully combined.
- Let the chocolate mixture cool slightly, then whisk in the eggs one at a time until well combined.
- Stir in the vanilla extract until well incorporated.
- In a separate bowl, sift together the flour, cocoa powder, and salt.
- Gradually fold the dry ingredients into the chocolate mixture until just combined.
- Pour the batter into the prepared pan and spread evenly with a spatula.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let it cool completely before adding the ganache.
Ganache Preparation
- In a small saucepan, heat the thickened cream over medium heat until it just begins to simmer.
- Pour the hot cream over the dark chocolate in a bowl and let it sit for a minute. Then stir until combined and smooth.
- Spread the ganache over cooled brownies and let set before cutting into squares.
Notes
Storage: Keep brownies in an airtight container at room temperature for up to four days or refrigerate for a week. They can be frozen for up to three months. Consider garnishing with sea salt for a sweet-and-salty contrast.
