For the Ganache
  • 170 g Dark Chocolate Using high-quality chocolate elevates the dessert.
  • ½ cup Thickened Cream Creates a smooth, luxurious ganache consistency.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Prepare your baking pan: Line a square (8-inch) pan with parchment paper, leaving a bit of an overhang for easy removal.
  3. Melt the butter and chocolate together in a medium saucepan over low heat, stirring constantly until melted and smooth (about 3-5 minutes).
  4. Remove from heat and add the white and brown sugars, mixing until fully combined.
  5. Let the chocolate mixture cool slightly, then whisk in the eggs one at a time until well combined.
  6. Stir in the vanilla extract until well incorporated.
  7. In a separate bowl, sift together the flour, cocoa powder, and salt.
  8. Gradually fold the dry ingredients into the chocolate mixture until just combined.
  9. Pour the batter into the prepared pan and spread evenly with a spatula.
  10. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let it cool completely before adding the ganache.
Ganache Preparation
  1. In a small saucepan, heat the thickened cream over medium heat until it just begins to simmer.
  2. Pour the hot cream over the dark chocolate in a bowl and let it sit for a minute. Then stir until combined and smooth.
  3. Spread the ganache over cooled brownies and let set before cutting into squares.

Notes

Storage: Keep brownies in an airtight container at room temperature for up to four days or refrigerate for a week. They can be frozen for up to three months. Consider garnishing with sea salt for a sweet-and-salty contrast.
