Brownie Base
  • 10 pieces Medjool dates, soaked Soaked in hot water for 10 minutes to soften
  • 1/2 cup almond flour Light and nutty, a great base
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder Pure cocoa flavor
  • 2 1/2 tbsp maple syrup Natural sweetener
  • 1 tsp vanilla extract A hint of aromatic flavor
  • 1/8 tsp salt Enhances sweetness and flavor
Cottage Cheese Layer
  • 1 cup cottage cheese Gives a creamy texture
  • 1/2 cup vanilla protein powder Additional protein
  • 1 1/4 cups almond flour Extra for the cookie dough layer
  • 2 1/2 tbsp maple syrup Sweetener for the mixture
  • 2 tbsp cashew butter Adds creaminess
  • 1 1/2 tsp vanilla extract More vanilla for deliciousness
  • 1/3 cup mini chocolate chips Perfect finishing touch

Method
 

Preparation
  1. Soak the 10 Medjool dates in hot water for 10 minutes to soften, then drain well.
  2. In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth.
  3. In a mixing bowl, combine cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla. Mix until smooth.
  4. Gently fold the mini chocolate chips into the mixture.
Assembly
  1. Line an 8x8 inch baking dish with parchment paper.
  2. Press the date-chocolate brownie mixture into the bottom layer evenly.
  3. Spread the cottage cheese mixture over the brownie layer evenly.
Freezing and Serving
  1. Freeze the assembled brownies for at least 1 hour.
  2. Once firm, lift out and cut into 9-12 squares. Serve from the freezer or let sit at room temperature for 5 minutes.

Notes

Use high-quality dates for sweetness. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
