Method
Melt the Chocolate
- Place the chopped dark chocolate in a heatproof mixing bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water. Stir occasionally until completely melted.
Blend the Tofu Mixture
- In a food processor, combine the soft tofu, sugar, flavourings, and salt. Blend until the mixture is silky smooth.
Combine
- Once your chocolate is melted, remove it from the heat and gradually whisk in the tofu mixture. If the chocolate becomes stiff, turn the heat back on just long enough to incorporate everything smoothly.
Taste and Adjust
- Give your mousse a taste. This is your chance to adjust sweetness or add more flavorings if desired.
Introduce Air for Lightness
- Beat in air bubbles with an electric mixer for about 2-3 minutes until it fluffs up slightly.
Chill
- Transfer the mousse into serving dishes and refrigerate for at least 2 hours, allowing it to set perfectly.
Serve
- Top with your choice of fresh fruit, crumbled cookies, or cake cubes before serving.
