  • 1 cup pitted dates (about 11 Medjool dates) Use soft, fresh dates for best flavor.
  • 1 cup raw walnuts Look for raw, organic walnuts.
  • 1 tsp vanilla extract (optional) Enhances flavor.
  • 1/2 tsp cinnamon (optional) Adds warm depth.
  • 3/4 cup dark chocolate Use high-quality (70% cocoa or higher).
  • flaked salt (for garnish) Adds contrast to sweetness.

Preparation
  1. Soak the pitted dates in a small bowl of hot water for about 5 minutes, then drain.
  2. In a food processor, combine the soaked dates, walnuts, vanilla extract, and cinnamon. Pulse until it reaches a sticky dough.
  3. Roll about 1 tablespoon of the mixture into balls and place on a baking sheet lined with parchment paper.
  4. Freeze the balls for at least 30 minutes until firm.
  5. Melt dark chocolate in a microwave-safe dish at 20-30 second intervals, stirring until smooth.
  6. Remove the balls from the freezer, coat them in melted chocolate, then return to the baking sheet.
  7. Drizzle leftover chocolate over the tops and sprinkle with flaked salt.

Notes

Keep these walnut date balls in an airtight container at room temperature for up to a week, or refrigerate for two weeks. They can also be frozen for up to three months.
