Preparation
- Soak the pitted dates in a small bowl of hot water for about 5 minutes, then drain.
- In a food processor, combine the soaked dates, walnuts, vanilla extract, and cinnamon. Pulse until it reaches a sticky dough.
- Roll about 1 tablespoon of the mixture into balls and place on a baking sheet lined with parchment paper.
- Freeze the balls for at least 30 minutes until firm.
- Melt dark chocolate in a microwave-safe dish at 20-30 second intervals, stirring until smooth.
- Remove the balls from the freezer, coat them in melted chocolate, then return to the baking sheet.
- Drizzle leftover chocolate over the tops and sprinkle with flaked salt.
Notes
Keep these walnut date balls in an airtight container at room temperature for up to a week, or refrigerate for two weeks. They can also be frozen for up to three months.
