Ingredients
  

Crust
  • 1.5 cups sugar cookie crumbs
  • 0.5 cups unsalted butter, melted
Filling
  • 2 packages (8 oz) cream cheese, softened
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cups chopped sugar cookies For added texture.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine sugar cookie crumbs and melted butter. Mix until the crumbs resemble wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Use the bottom of a measuring cup for an even layer.
Making the Filling
  1. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy—about 2-3 minutes.
  2. Add eggs one at a time, beating well after each addition until fully incorporated.
  3. Gently fold in the chopped sugar cookies, ensuring they’re evenly distributed throughout the mixture.
  4. Pour the cheesecake filling over the prepared crust in the pan, smoothing the top with a spatula.
Baking
  1. Bake for 55-65 minutes until the edges are set and the center is slightly jiggly. You want it to maintain a creamy texture.
Cooling and Serving
  1. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.

Notes

For a more flavorful crust, use high-quality sugar cookies. Best served garnished with whipped cream and extra chopped sugar cookies. Serve with coffee or sweet tea.
