  • 12 leaves fresh sage Utilize garden-fresh sage for enhanced flavor.
  • 1.5 tsp sea salt Adjust based on your taste preference.

Method
 

Preparation
  1. Peel and dice the apples into 1/2-inch cubes, and dice the onion into similar-sized pieces. Mince the fresh ginger and chop the sage leaves.
Cooking Turkey
  1. Heat avocado oil in a large skillet over high heat until shimmering (about 2 minutes).
  2. Add the ground turkey and sprinkle with 1 tsp of sea salt. Cook for about 8-10 minutes, breaking apart the meat until fully cooked and lightly browned. Transfer to a bowl and set aside.
Sautéing Onions
  1. In the same skillet, add the extra virgin olive oil and the diced onion, along with the remaining 0.5 tsp sea salt. Cook over medium-high heat for about 10 minutes until the onions are translucent and golden.
Caramelizing Apples
  1. Add the diced apples to the onions and cook for about 10 minutes, stirring occasionally until the apples soften and caramelize slightly.
Combining Flavors
  1. Return the cooked turkey to the skillet with the apples and onions. Add the minced ginger and stir to combine, cooking for an additional 2-3 minutes to marry the flavors.
Finishing Touches
  1. Remove from heat and stir in the chopped sage, allowing the residual heat to release the sage oils.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For a breakfast option, add a soft-boiled egg on top. Customize by adding diced bell peppers or carrots.
