  1. In a food processor, pulse the pitted dates until they form a sticky paste, about 1-2 minutes.
  2. Spread the date mixture evenly into a dish lined with parchment paper, pressing it down firmly to create an even layer.
  3. In a small bowl, combine creamy peanut butter with chopped peanuts, stirring until fully incorporated.
  4. Spread the peanut mixture over the date layer.
  5. In a microwave-safe bowl, melt dark chocolate chips with coconut oil in 30-second intervals, stirring until smooth and creamy.
  6. Pour the melted chocolate over the peanut butter layer and spread it evenly using a spatula for a glossy finish.
  7. Refrigerate for at least 30 minutes until set. Once firm, remove from the dish, cut into bars, and serve chilled.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to 3 months. For serving, cut into neat bars and pair with herbal tea or coffee.
