Preparation
- Preheat your oven to 325°F (160°C).
- In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of a greased springform pan.
- In a large bowl, beat cream cheese until smooth. Gradually blend in granulated sugar, then add eggs one at a time and vanilla extract.
- Layer half of the cheesecake filling over the crust, then top with the apple mixture. Pour remaining filling over apples.
- Combine oats, flour, brown sugar, melted butter, and cinnamon for the topping. Sprinkle over the cheesecake.
Baking
- Bake in the preheated oven for about 60 minutes until the edges set but the center jiggles slightly.
- Turn off the oven, crack the door open, and let cool for 30 minutes.
Cooling and Serving
- Remove from oven and cool completely at room temperature. Refrigerate for at least 4 hours before serving.
Notes
Chilling overnight enhances flavors. Store in the fridge for up to 5 days.
