Ingredients
  

Crust
  • 8 oz graham cracker crumbs Honey Maid recommended for sweetness.
  • 3 tbsp granulated sugar
  • 5 tbsp unsalted butter, melted At room temperature for smooth mixing.
Cheesecake Filling
  • 16 oz cream cheese Full-fat for the best texture.
  • ¾ cup granulated sugar
  • 3 large eggs Bring to room temperature for even baking.
  • 1 tsp vanilla extract
Apple Filling
  • 3 medium-sized apples (Granny Smith or Honeycrisp) Peeled and diced.
  • ½ cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp lemon juice To prevent browning.
Topping
  • ¾ cup old-fashioned oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup melted butter
  • 1 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of a greased springform pan.
  3. In a large bowl, beat cream cheese until smooth. Gradually blend in granulated sugar, then add eggs one at a time and vanilla extract.
  4. Layer half of the cheesecake filling over the crust, then top with the apple mixture. Pour remaining filling over apples.
  5. Combine oats, flour, brown sugar, melted butter, and cinnamon for the topping. Sprinkle over the cheesecake.
Baking
  1. Bake in the preheated oven for about 60 minutes until the edges set but the center jiggles slightly.
  2. Turn off the oven, crack the door open, and let cool for 30 minutes.
Cooling and Serving
  1. Remove from oven and cool completely at room temperature. Refrigerate for at least 4 hours before serving.

Notes

Chilling overnight enhances flavors. Store in the fridge for up to 5 days.
