  • 1/2 cup soy sauce Low sodium options reduce sodium intake
  • 1/4 cup water Adds moisture while simmering
  • 2 tbsp rice vinegar For a touch of acidity

  • 3 packs ramen noodles Discard the flavor packets; we're not using those
  • 1 tbsp butter For an extra silky finish

Preparation
  1. Bring a large pot of water to a boil for the ramen noodles. It usually takes about 10 minutes, so this step can be started while prepping the other ingredients.
  2. Dice the onion, slice the mushrooms, and shred or julienne the carrots. Make sure to have them chopped, so it's easy to add them to your pan.
Cooking
  1. Cook ramen noodles according to package directions, then drain and set aside. Keep an eye on the noodles; they cook quickly!
  2. In a large pan, heat sesame oil over medium-high heat. Once it shimmers, add ground turkey and cook until browned, about 5-7 minutes, breaking it up with a spatula.
  3. Stir in the ginger and cinnamon, cooking for about 30 seconds until fragrant. Don't rush this step; the smell is so inviting!
  4. Add onion, mushrooms, and carrots, cooking until softened—about 5-6 minutes. This step builds that depth of flavor.
  5. Pour in soy sauce, water, rice vinegar, and sriracha. Bring to a simmer and cover, allowing it to reduce slightly for about 5 minutes.
  6. Stir in butter until melted. This is where the magic happens, creating a luscious sauce.
  7. Toss in the cooked ramen noodles until coated, ensuring every noodle is dressed in that delicious sauce.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 3 days. You can prep the chopped vegetables and the sauce in advance to save time.
