  • 2 cups all-purpose flour I recommend using organic flour if you can.
  • 1 cup sugar Can be substituted with brown sugar.
  • 1 tablespoon baking powder Ensure it’s fresh to aid rising.
  • 1/2 teaspoon salt Balances out the sweetness.
Wet Ingredients
  • 1 cup milk Whole or 2% works best; dairy-free options can be used.
  • 1/3 cup vegetable oil Feel free to use melted butter for more flavor.
  • 1 teaspoon vanilla extract Adds extra warmth and sweetness.
  • 2 large eggs Should be at room temperature.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with non-stick spray or line it with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: 2 cups of all-purpose flour, 1 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  3. In another bowl, mix the wet ingredients: 1 cup of milk, 1/3 cup of vegetable oil, 2 large eggs, and 1 teaspoon of vanilla extract until smooth.
  4. Pour the wet mixture into the dry mixture and stir until just combined. It's okay if there are lumps; avoid overmixing.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top gently if needed.
  2. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean with a few moist crumbs.
  3. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Storage: Keep wrapped in plastic wrap or foil for freshness. This bread lasts for up to 4 days at room temperature and can be frozen for 3 months.
