Ingredients
  

Base and Noodles
  • 6 cups water Use filtered water for best taste.
  • 2 packages ramen noodles Discard the seasoning packets.
Sauce Ingredients
  • 1/2 cup soy sauce Opt for low-sodium for less salt.
  • 1/4 cup brown sugar Adds caramel sweetness.
  • 1 tablespoon sesame oil Provides nutty depth.
  • 2 cloves garlic, minced Fresh garlic elevates flavor.
  • 1 teaspoon ginger, grated Adds warmth and zing.
  • 1 cup mixed vegetables Frozen or fresh for convenience.

Method
 

Preparation
  1. In a large pot, bring 6 cups of water to a rapid boil.
  2. Once boiling, add 2 packages of ramen noodles and cook according to package instructions, about 3-4 minutes, stirring occasionally.
  3. While noodles cook, mix together 1/2 cup soy sauce, 1/4 cup brown sugar, 1 tablespoon sesame oil, minced garlic, and grated ginger in a small bowl until sugar dissolves.
Cooking
  1. When the noodles are nearly done, toss in 1 cup of mixed vegetables and stir to cook until tender.
  2. Pour the sauce mixture into the pot with the noodles and veggies, stirring to distribute evenly.
  3. Let everything simmer for an additional 2-3 minutes.
Serving
  1. Remove from heat and fold in chopped green onions.
  2. Serve hot and enjoy.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. If the sauce thickens too much, add a splash of hot water to loosen.
