Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, followed by molasses and vanilla extract until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll the dough into balls, using a tablespoon to scoop out even portions.
  7. Flatten each ball slightly with your hand or the bottom of a glass.
Baking
  1. Bake for 10-12 minutes until the edges are set but the center remains soft.
  2. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier option, substitute some sugar with applesauce. Store cookies in an airtight container at room temperature for up to a week.
