Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg, followed by molasses and vanilla extract until well incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll the dough into balls, using a tablespoon to scoop out even portions.
- Flatten each ball slightly with your hand or the bottom of a glass.
Baking
- Bake for 10-12 minutes until the edges are set but the center remains soft.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, substitute some sugar with applesauce. Store cookies in an airtight container at room temperature for up to a week.
