  • 1/2 cup unsweetened shredded coconut Adds a lovely chewiness; be sure to use unsweetened for control over sweetness.
  • 1/2 cup raw pecans Provides healthy fats and protein. Substitute with pumpkin seeds if nut-free.
  • 1/2 cup raisins Naturally sweet, helps bind the ingredients together.
  • 1/4 cup protein powder Plant-based or whey protein powder based on preference.
  • 1/2 tsp cinnamon Enhances the flavor beautifully.
  • 1/8 tsp salt Just a pinch to elevate sweetness.
  • 1 Tbsp water Helps with binding; adjust as needed.
  • 1 tsp vanilla extract Adds depth and aroma.

Method
 

Preparation
  1. In a food processor, add all your ingredients: unsweetened shredded coconut, pecans, raisins, protein powder, cinnamon, salt, water, and vanilla extract. Pulse for about 1-2 minutes until the mixture clumps together.
  2. If the mixture seems too dry, add another tablespoon of water and pulse until you achieve a sticky texture.
  3. Using your hands, roll about one tablespoon of the mixture into a ball and repeat until you’ve created around 13 balls.
  4. Optional: Roll the balls in more shredded coconut or dip them in melted dark chocolate for extra flavor.
  5. Store in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes

These energy balls are gluten-free and can be customized to include different nuts or flavors. Great for kids and perfect for lunchboxes!
