- In a food processor, add all your ingredients: unsweetened shredded coconut, pecans, raisins, protein powder, cinnamon, salt, water, and vanilla extract. Pulse for about 1-2 minutes until the mixture clumps together.
- If the mixture seems too dry, add another tablespoon of water and pulse until you achieve a sticky texture.
- Using your hands, roll about one tablespoon of the mixture into a ball and repeat until you’ve created around 13 balls.
- Optional: Roll the balls in more shredded coconut or dip them in melted dark chocolate for extra flavor.
- Store in an airtight container in the fridge for up to a week or freeze for longer storage.
