Filling
  • 1 cup cranberry sauce (homemade or store-bought) Quality counts for best flavor.
  • 1 cup cream cheese, softened Let sit at room temperature for at least 30 minutes.
  • 1/4 cup powdered sugar Adjust to taste.
  • 1 teaspoon vanilla extract Adds depth of flavor.
Assembly
  • 1 large tortilla wrap Flour or whole wheat.
  • 1/2 cup chopped pecans or walnuts Feel free to roast them.
  • optional Fresh cranberries for garnish Adds color and a festive touch.

Method
 

Preparation
  1. In a medium bowl, combine cranberry sauce, softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth.
  2. Place tortilla on a clean surface. Spread the cranberry cream cheese mixture evenly over the tortilla, leaving a half inch space around edges.
  3. Sprinkle chopped nuts over the cream cheese layer.
  4. Roll the tortilla tightly from one end to the other.
  5. Wrap the rolled tortilla tightly in plastic wrap and refrigerate for about 1 hour.
  6. Unwrap and slice the roll into pinwheels about an inch thick.
  7. Garnish with fresh cranberries before serving.

Notes

These roll ups can be made a day in advance and stored in an airtight container in the fridge. They also freeze well.
