Make the Cranberry Ice Cubes
- Pop about 12 cranberries into each ice cube mold.
- Pour cranberry juice into each mold until halfway full, then top off with apple juice.
- Leave a little space at the top for expansion when freezing.
- Add a sprig of rosemary to each section.
- Place the tray in the freezer overnight.
Assemble Your Mimosas
- Gently push the mistletoe ice cubes out of the molds.
- Place them in cocktail glasses.
- Pour Champagne (or Sparkling Apple Cider) over the ice cubes slowly.
- Serve immediately and enjoy!
Notes
These Mimosas can be made ahead, just ensure to serve them within five days for the best taste. Fresh cranberry and rosemary ensure vibrant flavors.
