Ingredients
  

For the Mimosas
  • 1 cup Fresh Cranberries Look for bright, firm berries.
  • 6 sprigs Fresh Rosemary Choose vibrant, green sprigs.
  • 1/2 cup Cranberry Juice Cocktail A quality brand like Ocean Spray is recommended.
  • 1/2 cup Apple Juice Use a natural brand such as Mott's.
  • 1 bottle (750 ml) Champagne, chilled Brut or extra brut preferred for a drier finish.
  • Ice Cube Molds Any molds will work Festive shapes add charm.
  • Cocktail Glasses Classic flutes or any clear glass Depending on your holiday theme.

Method
 

Make the Cranberry Ice Cubes
  1. Pop about 12 cranberries into each ice cube mold.
  2. Pour cranberry juice into each mold until halfway full, then top off with apple juice.
  3. Leave a little space at the top for expansion when freezing.
  4. Add a sprig of rosemary to each section.
  5. Place the tray in the freezer overnight.
Assemble Your Mimosas
  1. Gently push the mistletoe ice cubes out of the molds.
  2. Place them in cocktail glasses.
  3. Pour Champagne (or Sparkling Apple Cider) over the ice cubes slowly.
  4. Serve immediately and enjoy!

Notes

These Mimosas can be made ahead, just ensure to serve them within five days for the best taste. Fresh cranberry and rosemary ensure vibrant flavors.
