  • 2 medium medium beets Roasted or boiled, peeled, and sliced. Choose organic for the best flavor.
  • 1 large cucumber Thinly sliced or diced. Persian cucumbers are especially sweet and crunchy.
  • 4 oz feta cheese Crumble for high-quality Greek feta for its bold flavor.
  • ¼ small red onion (optional) Thinly sliced for added sharpness.
Dressing Ingredients
  • 3 tbsp extra virgin olive oil Look for cold-pressed for maximum flavor.
  • 2 tbsp fresh lemon juice Freshly squeezed for brightest taste.
  • 1 tsp honey (optional) Balances the acidity of the dressing.
  • ½ tsp salt Enhances the flavors.
  • ¼ tsp black pepper Freshly ground for the best flavor.
Garnish (Optional)
  • 2 tbsp walnuts or pecans (optional) Toasted for crunch and nutty flavor.
  • 2 tbsp fresh parsley Chopped. Fresh herbs elevate the taste.

Method
 

Preparation
  1. Roast or boil the beets until tender, which usually takes about 30-40 minutes if boiling, or wrap them in foil and bake at 400°F (200°C) for 45 minutes to 1 hour until fork-tender. Let them cool, peel, and slice them into rounds or cubes.
  2. While beets are cooling, slice or dice the cucumber and place it in a large mixing bowl.
  3. Crumble the feta cheese over the cucumber. If using red onion, toss it in now.
  4. In a small mixing bowl, whisk together the olive oil, lemon juice, honey (if using), salt, and pepper until well combined.
Combining and Serving
  1. Pour the dressing over the vegetables in the mixing bowl and gently toss to combine.
  2. Sprinkle the chopped parsley over the salad, tossing lightly. If adding nuts, do so now.
  3. Serve immediately or chill in the fridge for 15-20 minutes to enhance flavors.
