  • 1 cup pineapple tidbits, drained Opt for fresh if possible, but canned works beautifully too. Make sure to drain well.
  • 1 cup shredded sweetened coconut Look for high-quality coconut that isn’t overly processed.
  • 1 cup canned mandarin oranges, drained Fresh mandarins can be used for a zestier taste.
  • 1 cup miniature marshmallows Feel free to use large marshmallows cut into pieces.
  • 1 cup sour cream Full-fat sour cream adds richness. Greek yogurt is a great substitute.

Preparation
  1. In a medium mixing bowl, add the drained pineapple tidbits, shredded coconut, drained mandarin oranges, and miniature marshmallows.
  2. Gently fold in the sour cream until all ingredients are well coated.
  3. Cover the bowl and refrigerate the salad for at least 1 hour.
  4. Retrieve the salad from the fridge, give it a gentle stir, and serve chilled.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Salad can be made a day in advance for better flavor. Consider topping with toasted coconut for added crunch.
