Ingredients

Wet Ingredients
  • 1 cup low-fat cottage cheese For an extra creamy texture, using full-fat cottage cheese works wonders!
  • 2 large eggs Make sure to let your eggs sit at room temperature for about 30 minutes before use.
Dry Ingredients
  • 1.5 cups all-purpose flour For a gluten-free option, you can swap with a 1:1 gluten-free flour blend.
  • 2 tsp baking powder Use aluminum-free baking powder for a cleaner taste.
  • 1 tsp salt Sea salt elevates the bread's flavor beautifully.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. Whisk together the cottage cheese, eggs, and salt in a large bowl until smooth and well combined.
  3. Combine the flour and baking powder in another bowl, mixing well to eliminate any lumps.
  4. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.
Baking
  1. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Notes

Leftover bread can be stored at room temperature for up to 3 days in an airtight container, or in the refrigerator for up to a week. You can prepare the batter a day in advance and store it in the refrigerator, then bake it in the morning.
