- Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- Whisk together the cottage cheese, eggs, and salt in a large bowl until smooth and well combined.
- Combine the flour and baking powder in another bowl, mixing well to eliminate any lumps.
- Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.
Baking
- Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Notes
Leftover bread can be stored at room temperature for up to 3 days in an airtight container, or in the refrigerator for up to a week. You can prepare the batter a day in advance and store it in the refrigerator, then bake it in the morning.
