Wet Ingredients
  • ¾ cup milk Whole or buttermilk recommended; lactose-free options work too
  • 1 large egg Room temperature for best results
  • 2 tablespoons vegetable oil Or melted butter for a richer flavor
  • ½ cup pumpkin puree Canned is fine, but homemade is better

Preparation
  1. In a medium bowl, whisk together the flour, baking powder, sugar, pumpkin spice, and salt.
  2. In a separate large bowl, whisk together the milk, egg, oil, and pumpkin puree until smooth.
  3. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  4. Preheat a non-stick skillet over medium heat.
Cooking
  1. Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form around the edges, about 2-3 minutes.
  2. Carefully flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  3. Stack pancakes high and serve with desired toppings.

Notes

Make ahead by mixing dry ingredients a day in advance. For best texture, ensure eggs and milk are at room temperature.
