Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg until fully combined.
  3. In another bowl, mix the honey (or maple syrup), vegetable oil, and eggs until the mixture is smooth and well blended.
  4. Fold the grated zucchini and carrots into the wet ingredients until completely incorporated.
  5. Gradually stir in the dry ingredients, mixing until just combined—take care not to overmix to ensure a light, fluffy texture.
  6. If desired, fold in the chopped nuts for added crunch.
  7. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for a few minutes before transferring the muffins to a wire rack to cool completely.
