Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg until fully combined.
- In another bowl, mix the honey (or maple syrup), vegetable oil, and eggs until the mixture is smooth and well blended.
- Fold the grated zucchini and carrots into the wet ingredients until completely incorporated.
- Gradually stir in the dry ingredients, mixing until just combined—take care not to overmix to ensure a light, fluffy texture.
- If desired, fold in the chopped nuts for added crunch.
- Divide the batter evenly among the muffin cups.
Baking
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring the muffins to a wire rack to cool completely.
Notes
Consider using freshly grated carrots and zucchini for maximum moisture and flavor. You can freeze these muffins for a few months or substitute ingredients for different dietary needs.
