Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup honey Use high-quality, local honey for a richer flavor
  • 1/2 cup dark brown sugar Light brown works too, but dark brings depth
  • 1/4 cup milk Whole milk recommended for added creaminess
  • 1/2 cup molasses Make sure it’s unsulfured
  • 2 large eggs Preferably organic

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan, or line it with parchment paper for easy release.
  2. In a bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves, nutmeg, and salt until well combined.
  3. In another bowl, mix the honey, brown sugar, milk, and molasses; stir until the sugars are dissolved.
  4. Add the eggs to the wet mixture and blend well until it’s smooth and glossy.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until no flour streaks remain.
  6. Pour the batter into your prepared loaf pan, using a spatula to smooth the top.
Baking
  1. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Allow eggs and milk to come to room temperature before using for better blending. Be patient and let the gingerbread cool fully before slicing.
