Cheese
  • 4 ounces goat cheese Crumbled; substitute with feta for a stronger flavor.
Dressing
  • 2 tablespoons balsamic glaze Enhances sweetness; can make your own by reducing balsamic vinegar.

Preparation
  1. Wash the arugula in cold water to remove any grit and spin dry in a salad spinner for about 2-3 minutes.
  2. Hull and slice the strawberries into medium-sized pieces just before serving.
Mixing
  1. In a large serving bowl, add the arugula and gently lift the greens to aerate.
  2. Toss in the blueberries and sliced strawberries, ensuring even distribution.
  3. Sprinkle the crumbled goat cheese evenly over the salad.
  4. Drizzle the balsamic glaze and gently toss to coat without bruising the arugula.

Notes

Don’t dress the salad until just before serving to keep it crisp. For extra crunch, consider adding toasted nuts or seeds.
