Filling
  • 8 ounces feta cheese, crumbled Look for a high-quality, authentic Greek feta for the best flavor.

  • 1 teaspoon chili flakes Adjust to taste based on your spice preference.
  • 1/2 teaspoon cumin seed Freshly toasted for aromatic depth.
  • 1/3 cup honey Optional dipping sauce, but a must-try!
Phyllo Dough
  • 16-20 sheets frozen phyllo dough, thawed Store in the fridge overnight for best results.
  • 1 tablespoon extra virgin olive oil Choose a fruity olive oil for extra flavor.
  • 1 tablespoon salted butter Room temperature for easy blending.

Method
 

Preparation
  1. In a bowl, combine the crumbled feta, chopped dill, grated garlic, chili flakes, and cumin. Mix well until incorporated, about 1-2 minutes.
  2. Preheat frying oil in a skillet over medium heat (about 350°F).
  3. On a clean surface, lay out a sheet of phyllo dough and brush lightly with olive oil. Repeat layering with 4-5 sheets, brushing olive oil on each layer.
  4. Add a generous spoonful of the feta mixture at one end of the phyllo dough.
  5. Fold in the sides and tightly roll up the phyllo to enclose the filling completely.
Cooking
  1. Carefully place the rolls in the heated oil seam-side down. Fry until golden brown, about 3-4 minutes on each side.
  2. Once golden brown, remove the rolls and drain them on paper towels.
  3. Serve warm, drizzled with honey if desired.

Notes

Fried Feta Rolls are versatile; enjoy with dipping sauces like tzatziki or a Greek salad. For storage, they last up to 2 days in the fridge or can be frozen un-fried for a month. Fry straight from the freezer, adding a few minutes to the cooking time.
