- In a bowl, combine the crumbled feta, chopped dill, grated garlic, chili flakes, and cumin. Mix well until incorporated, about 1-2 minutes.
- Preheat frying oil in a skillet over medium heat (about 350°F).
- On a clean surface, lay out a sheet of phyllo dough and brush lightly with olive oil. Repeat layering with 4-5 sheets, brushing olive oil on each layer.
- Add a generous spoonful of the feta mixture at one end of the phyllo dough.
- Fold in the sides and tightly roll up the phyllo to enclose the filling completely.
Cooking
- Carefully place the rolls in the heated oil seam-side down. Fry until golden brown, about 3-4 minutes on each side.
- Once golden brown, remove the rolls and drain them on paper towels.
- Serve warm, drizzled with honey if desired.
Notes
Fried Feta Rolls are versatile; enjoy with dipping sauces like tzatziki or a Greek salad. For storage, they last up to 2 days in the fridge or can be frozen un-fried for a month. Fry straight from the freezer, adding a few minutes to the cooking time.
