- In a large bowl, combine the drained corn, diced tomatoes, diced red onion, and shredded cheese.
- In a separate bowl, combine the mayonnaise and lime juice and mix until creamy and smooth.
- Pour the mayo mixture over the corn mixture and gently mix with a spatula until well coated.
- Gently fold in the Fritos last to maintain their crunch.
- Cover the bowl with plastic wrap and chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
Store leftovers in an airtight container in the fridge, keeping any Fritos separate until ready to serve. Can be made a day in advance, just add Fritos just before serving. Use fresh ingredients for the best flavor.
