  • 3/4 cup granola Choose your favorite mix (honey or nut-based granola recommended).
  • 1 1/2 cup yogurt Greek yogurt recommended for creamier texture. Flavored yogurt adds a fun twist.
  • 1/2 cup peanut butter Smooth or crunchy; use sunflower seed butter for nut-free.
  • 2/3 cup vanilla protein powder Can swap for chocolate or plant-based protein for a vegan option.
  • 1 pinch salt Enhances sweet flavors.
  • 1/3 cup chocolate chips, melted and cooled Choose dark chocolate for richer flavor, semi-sweet for classic touch.
  • 1 tsp coconut oil Helps chocolate drizzle harden when frozen.

Method
 

Preparation
  1. Line a 12-cup muffin tin with paper liners. Measure 1 tablespoon of granola into each muffin cup.
  2. In a medium bowl, combine yogurt, peanut butter, and protein powder; whisk until smooth.
  3. Spoon the yogurt mixture over the granola base, filling each cup three-quarters full.
  4. Pop the filled muffin tin into the freezer for about 30 minutes until yogurt starts to solidify.
  5. In a microwave-safe bowl, melt chocolate chips and coconut oil together in 30-second intervals until smooth.
  6. Remove the tin from the freezer, drizzle melted chocolate over each yogurt cup, and sprinkle with any remaining granola.
  7. Return to the freezer for about 45 minutes until firm.
Enjoy
  1. Once set, carefully remove the bites from the tin and store in an airtight container in the freezer for up to two weeks.
  2. Let sit at room temperature for 20-30 minutes before enjoying.

Notes

These bites can be prepared weeks in advance and are perfect for grab-and-go snacks. Freeze in an airtight container to prevent freezer burn.
