Cooking
  1. Roast in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is golden brown and crispy. Flip halfway through for even browning.
  2. Once roasted, remove from the oven and let cool for a minute. Garnish with chopped parsley before serving.
