Main Ingredients
  • 4 pieces cod fillets Look for wild-caught cod for the best flavor
  • Salt and pepper, to taste Adjust according to preference
  • Green onions, chopped for garnish
  • Sesame seeds for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, and rice vinegar until well combined.
  4. Place the cod fillets on the prepared baking sheet. Lightly sprinkle with salt and pepper.
  5. Generously coat each fillet with the soy-ginger mixture.
Cooking
  1. Bake the cod for 12-15 minutes until it flakes easily with a fork and is golden.
  2. While the cod bakes, chop the green onions and toast the sesame seeds in a dry skillet for 2-3 minutes.
  3. Once baked, remove the cod from the oven and garnish with green onions and toasted sesame seeds.
  4. Serve immediately with your favorite sides.

Notes

Keep an eye on the cod while it bakes to avoid overcooking. Fresh ingredients yield the best flavor.
