Preparation
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, and rice vinegar until well combined.
- Place the cod fillets on the prepared baking sheet. Lightly sprinkle with salt and pepper.
- Generously coat each fillet with the soy-ginger mixture.
Cooking
- Bake the cod for 12-15 minutes until it flakes easily with a fork and is golden.
- While the cod bakes, chop the green onions and toast the sesame seeds in a dry skillet for 2-3 minutes.
- Once baked, remove the cod from the oven and garnish with green onions and toasted sesame seeds.
- Serve immediately with your favorite sides.
